Need inspiration for dairy, wheat, and sugar-free meals

Anonymous
I am currently off of all cow dairy, wheat/gluten, and sugar. I can of course have veggies, fruit, meat (though I prefer only chicken or salmon), quinoa/lentils/beans, nuts, and spices. That's about the extent of what I can eat. I have lentils but no great recipes for how to prepare them that don't involve dairy. Any suggestions?

Thanks, I'll try digging through here--it's hard to find recipes that are both gluten and dairy free and are not essentially vegetables thrown into a pot. I'm just trying to embrace what I can eat even though there are so many restrictions.

Hands down the best recipes here. There are stir-fry ideas - combos of amazing proteins with veggies and spices all on two pages of ideas. Plus a ton of regular recipes categorized into protein, vegetables, etc.

The inspiration is in the seasoning. Go for a blue plate special. Chicken or salmon, cooked however you like them cooked (we bake both often but can season in a variety of ways). Roast some veggies. Get hooked on that addictive roasted broccoli recipe (toss florets in olive oil, salt and spicy red pepper flakes, roast in oven - can toss in pine nuts if you want, or not, if you don't want - I've also squeezed some lemon over the top before serving, which is lovely). Fall in love with brussels sprouts.

Take the PP's taco suggestion. Fish tacos with cabbage slaw. Chicken tacos with lime and cilantro and onion. Tacos with black beans. Grilled peppers and onions. Whatever floats your boat. If you can find ripe avocados, go nuts.

As for your lentil issue, you could make this without the ghee - http://www.foodnetwork.com/recipes/wolfgang-puck/dal-recipe/index.html

Good luck. It's not as hard as you think it is, I promise.

She uses a lot of nut milks in lieu of dairy milk:

I haven't made anything but my mom loves her stuff.

Curried vegetables with a little coconut milk and store bought curry paste. Okra, potato, mushroom, lentils, greens, and tomato curry is what I made most frequently. Used frozen greens and lentils. Reheats well, freezes well, and if you have a wide variety of tastes/textures it is good.

Think about rice noodles, stir fries, bean stews, paella.

Also salmon cakes. With grits and roasted broccoli.

Can you have soy? Find gf soy sauce or use coconut aminos and do Asian dishes. Very little dairy or gluten in those dishes- and veggies are highlighted. Check Oh She Glows blog too for good ideas.

I am sure OP knows this, but on the off chance she doesn't - Soy sauce is not gluten free unless it specifically states it on the bottle.
