Non-dairy cake

I am looking for a non-dairy cake to accommodate a kosher family at a birthday party...while still being yummy for everyone else. I have not had great luck with the non-dairy butter in the past. Does anyone have a suggestion? I considered doing two cakes or cupcakes (1/2 and 1/2) but that doesn't seem inclusive. The menu as requested by the b-day person definitely includes meat. Thanks

I made a non-dairy cake for an informal wedding shower for my dairy-allergic friend. I just used a basic homemade cake recipe from a cookbook (can't remember which one) Substituted shortening (I use Spectrum from WF) for the butter and orange juice for the milk. Made 'buttercream" frosting using the same shortening instead of butter and OJ instead of milk/cream. Came out great and the bride was so happy (she never gets to eat cake!) An alternative could be angel food cake--lots of eggs but no dairy (but no frosting either).

Duncan Hines mixes are dairy.

Duncan Hines mixes are dairy.


Duncan Hines cake mixes (at least most of them) do not contain dairy.

Kosher doesn't necessarily mean non-dairy. If it's pareve, it's kosher and prepared without milk (or meat, for that matter). Basically, pareve items can be consumed with either meat or milk items b/c it has components of neither.

Jane Green the author has a yummy orange cake recipe (just omit the whipped cream side):



Almost Flourless Orange Cake with Marmalade

Ingredients
1 orange
3 eggs
1 cup confectioners’ sugar
¼ cup plain flour, sifted
1 teaspoon baking powder
1 cup ground almonds
½ cup marmalade
Icing sugar for dusting
Optional: small carton whipping cream, rind of 1 orange

Method
Preheat the oven to 350°F. Grease an 8? springform cake tin and line it with greaseproof paper.
Put the orange in a pan, cover with water and simmer for 1 hour (or nuke in a microwave for around 25 minutes) until soft. Cut the orange in half, remove pips and purée in a food processor.
Beat the eggs and sugar until pale and thick. Fold in the flour, baking powder, almonds and orange purée. Pour into the tin and bake for 1 hour.
Melt the marmalade in a small pan, then pour through a fine sieve, pressing to get all the juice out. Spread the rind-free juice over the cake.
When cool, sift the icing sugar over the cake. Mix whipped cream with the orange rind and serve alongside.

Most Duncan Hines cakes and frostings are dairy free. I make the Devil's Food cake into cupcakes all the time for my dairy allergic daughter. Also make the yellow cake, lemon cake and spice cake for her. All are dairy free. Also, the chocolate, white, cream cheese frostings are dairy free. Maybe even more are but I haven't looked.

Yes, this exactly. I am the one who suggested Duncan Hines. I can't have dairy either and make these all the time - even use the canned frostings. You just have to look at the label to check if it contains any dairy - which most don't.
