This one. You could make it in a 8 or 9 in springform pan, grease well and put parchment in the bottom. Make an easy glaze with nondairy chocolate microwaved with a little coconut oil, margarine, or shortening. Dump on top of cake with a few almond slices and put in fridge until glaze hardens. |

This is vegan (no eggs, no dairy) and incredibly easy. It doesn't sound like it should work but it does. I like making two and layering them with raspberry jam (thinned with some hot water) in between. If you can find a non-dairy cool whip type thing, that's a great frosting (it's easier if you assemble the cake then put it in the fridge or freezer for a while) then top with fresh fruit, non-dairy chocolate chips, shredded coconut, whatever you like!
1 ½ cups unbleached flour ¾ cup sugar or other sweetener ½ tsp salt 1 tsp baking soda 3 tbsp cocoa powder 1 tsp vanilla 1/3 cup canola oil 1 tbsp distilled white vinegar 1 cup cold water Method Preheat the oven to 350 (175) degrees. Combine the flour, sugar, salt, baking soda, and cocoa powder in a bowl and stir it with a fork until mixed. Make a hole in the centre and add the vanilla, oil, vinegar and water. Stir with a fork until well mixed. Pour into a 9x9-inch baking dish (or cupcake pan), and bake in the preheated oven for 30 minutes, until a toothpick inserted in centre comes out clean. |
