| My mom would surely object to the idea, but she didn't work outside the home ( simply worked hard raising 8 kids) and regular rice was less expensive. Am thinking it may be an easier side to add to small protein and extra veggies. TIA |

| I use minute rice but only cook dishes with lots of sauce (like Jambalaya, etc.) The rice is just a vehicle for that. |

It is so easy to make rice. Just make sure your pot has a tight fitting lid. White rice, brown 2 cups of rice in olive oil. Add four cups of broth or water. Bring to a boil, reduce heat cover with tight lid. Simmer low for 20 minutes. Take off heat and let sit for 5 minutes. Fluff with fork.
You don't have to brown the rice, I find it adds more flavor. brown rice is the same except I ad a 1/4 more liquid and it takes 50 minutes. |
| ^^just to add, make this on the weekend and save in fridge or freeze it. Reheats well just add a small amount of liquid and microwave in short increments. |
