"Emergency" meals

What are your "emergency" meals? Like when your meal plans fall through (for example, I had unexpected guests last night and there went my leftovers for lunch), what do you make that probably isn't at your regular level of balanced nutrition/flavor, but is great in a pinch?

Here are two "dishes" I make occasionally:
Refried beans spread in a thin layer topped with cheese and broiled till the cheese is brown and nutty-tasting
Salad one of two ways: greens with vinegar and salt, blue cheese, and green olives or greens with just oil (walnut or macadamia) and salt

Frittata w/ whatever veggies are lying around

You mean like what do I always have the makings for so I can just pull them out and cook in a pinch? If so:

Quesadillas (just cheese or with black beans, tomato, cilantro, lime, etc. if I am feeling fancy and we have those things in the house)

Mac and cheese from the box

Ravioli with pesto (always have both things in the freezer)

Pasta with olive oil, salt and pepper. Maybe toss a veg or two in there raw if I have the time/inclination/supplies.

I also make miso with tofu and sometimes some veggies a fair amount. A tub of miso can just hang out in the fridge for a while, and making the soup is easy.

Both these things pair well with salad. Use olive oil and a vinegar - balsamic or rice - and toss, add salt/pepper.

Some kind of pasta
Salmon burgers with frozen veg.

pita breads
Tomato sauce (I try to keep a jar of spaghetti sauce around for this reason)
whatever veggies we have lying around
mozzerella

bonus - everyone makes their own, they get what they want and you don't have to do it

kids are 2nd grade and up btw

Are salad greens with oil "dinner" in your house? I don't think I could manage that as dinner.

Spaghetti carbonara is my go-to tired, hungry, need a quick satisfying meal in a pinch with pantry staples. If I haven't shopped. Otherwise, if I have fresh veg, I'll whip up pasta with that or tacos.

Eggs usually save the day.

I'll scramble or bake them with:

cheese
onions
beans
salsa
spinach
roasted peppers
leftover potato anything
ham
you name it!

7 layer bean dip (refried beans, plain yogurt, salsa, tomatoes, avocado, cheese, black olives & hot sauce)
Vegetable Gyoza pot stickers & shrimp skewers w/dipping sauce (frozen from trader joes)
Homemade cheese sauce over broccoli & baked potato (topped with nutritional yeast for an extra vitamin boost)
Salami & Cheese & Bread & Olives & Fruit
mac n cheese, frozen chicken nuggets & broccoli (not my favorite though)
Takeout Burritos

No, but if my sides fail, the greens prop dinner up nicely.

I LOVE carbonara, but I never have bacon (or whatever the Italians actually use) in the house. Do you freeze it?
