| On an elimination diet for DD and am exhausted, I would love your quick/easy dairy free meal (all three) and snack ideas. This is rough, I loooove dairy! |
|
I feel for you! I'm not sure if you are just cutting out dairy or other things, but here are some ideas:
- Scrambled eggs or omelets (mix with water instead of milk) - Cereal with almond/soy/coconut milk - Rice with veggies and tofu/meat and soy sauce - Pasta with marinara, veggies, meat (no cheese) - Coconut ice cream (not nearly as good as dairy, but it's not awful) - Peanut butter and toast |
| Sandwiches. Pb&j, Hummus and veggies on pitA with or w/o grilled chicken strips, blt. Salads with vinaigrette. Grilled salmon/chicken/steak and rice. Baked potatoes topped with chili. |
Almost all breads have dairy in them. |
I don't know about non-natural type breads, but this has never been an issue for us. Anyway, you can just look on the "CONTAINS" part of the label. I find it easy to get dairy-free breads. Soy can be challenging. (My favorite brand is Vermont Bread Company.) Get one of Nava Atlas's quick vegan cookbooks if you can, or look up her website-- I love her recipes. Tonight we had vegetarian chili with cornbread (made w/ rice milk instead of dairy milk, olive oil not butter). Vegan sour-cream and cheese do exist, too. I love Mark Bittman's recipe for pasta with broccoli (easily Googled) with some chickpeas thrown in for protein. BLTs are my current obsession with tomatoes in season. |

Double check, but I think Ezekiel bread is dairy free. In either case, most food coops and the like should have dairy free bread.
Throw some black beans and and salsa (or better yet, a seasoning called Sofrito) in a crock pot. Cook up a bit of jasmine rice with a few teaspoons of coconut milk. Voila, Carribean style beans and rice. Most curries do not require milk and they can be made in the crockpot as well. Likewise on veggie stews. Throw hummus, veggies like red peppers and shredded carrots, greek olives in a pita or wrap. Toffuti pops, I think, are dairy free. There's also Rice Dream "ice cream products" made with rice milk. I'm not a fan of dairy free cheeses, but they are sold at health food stores as well. |

Just made a sausage and lentil stew with fire roasted tomatoes.
Package of sausage Bag of lentils Drained can of fire roasted tomatoes Salt 4 cups beef broth Carrots if you feel like it Crock pot for 3 hours on high 6-7 hours on low. |
Not the OP but that sounds delicious. I might add some cut up onions because I firmly believe that everything (except dessert) tastes better with onions. |
|
so my son ended up being allergic to dairy, nuts, seeds, coconut and eggs...sigh.
i've found that most substitutes are not good, so cook meals that already don't contain the product. meats and veggies, beans and rice, pasta with meat sauce. snacks: veggies, fruit, pretzels, chips and guac. desserts: baked apples, sorbet, ice pops. |
| Amy's organic makes a dairy free bean and rice frozen burrito. I love these and also the Daiya dairy free frozen pizzas at whole foods. obviously not as good as real pizza but it got me over the cravings at times! |
| OP here, thanks so much for the suggestions so far! I forgot to mention that I don't eat beef or pork, but can easily substitute ground turkey or turkey sausage for those. |
