| Drumsticks with a penzy's bbq seasoning. Garlic-y spinach and sweet potato fries. A bit of leftover plain pasta for the kids' side. |
I googled and found this which also sounds yummy. Is this similar to your casserole? http://allrecipes.com/recipe/quinoa-and-black-beans/ |
| Homemade pizza made from stale bagels. |
| Brown rice with shrimp and pineapple marinated in an orange sauce and sautéed. Totally made up recipe that everyone devoured. |
It was so good. No recipe. Put presoaked black beans and onion and garlic in the crockpot with more water than normal, cooked for 8 hours. Added leftover rice, 2 already baked sweet potatoes, cooked for a few more hours. Little immersion blender action. Done. I'm newly vegan and didn't miss meat or cheese for a moment with this one. |
| pork schnitzel, pan fried cinnamon apples, peas, biscuits with honey and butter |
| baked salmon with ginger, rice, sweet potato and string beans. |
I use fresh veggies but often buy chicken in bulk and precut and freeze. Just pull out bag the night before and put in fridge ane the dump in pan Frozen veggies work great, but I find the leftovers are not good. |

Agree that stir fry can take a while. I will either chop the night before or cheat and buy the pre cut packages of stir fry veg at whole foods. They're a little expensive - probably $6 or $7 for enough for us(2 adults, 2 kids under 4), but overall the meal is still pretty cheap and i like the variety - it would cost more and i'd have more rotten veggies if i bought all of the veggies individually.
As for sauces, i do make them myself, no recipe. After you follow recipes a few times its easy and quick enough. Some combination of soy sauce, rice wine, vinegar, sesame oil, ginger, garlic, and a corn starch/chicken stock slurry to thicken. |
| Tilapia and sweet potatoes. |
| Made chicken enchiladas with a spinach salad. Yum! |
| Spaghetti with roasted red pepper pesto, salad, homemade bread |
