last night: pork chops in a garlic white wine sauce, steamed green beans and wild rice While dinner was cooking I peeled and boiled potatos to make mashed potatos for tomorrow night's dinner So we will have tonight-- baked chicken, mashed potatos and a salad. I WOH and so I try to get a jump start on the next day. My boys LOVE mashed so I try to save that for a Sunday night dinner, BC it is time consuming-- it will be a nice surprize to have them mid-week. I love the stir fry idea, but I always feel that it never turns out to be a "quick" meal for me...all that chopping and frying, am I alone? Perhaps I'm doing it wrong or not prepping properly. Can anyone share their easy and quick stir fry recipes/tricks?
For stir-fry, I put the rice in the rice cooker and cut up some chicken breasts/beef cubes/tofu and throw it into the wok with a bag of frozen broccoli or other veg and then once its cooked, i pour stir-fry sauce (LOVE the TJs soyaki sauce) on top. Done.
I use fresh veggies but often buy chicken in bulk and precut and freeze. Just pull out bag the night before and put in fridge ane the dump in pan Frozen veggies work great, but I find the leftovers are not good.
