OP here. Thanks to the few posters who gave suggestions about actual drinks or links I could try. As for the rest of the discussion...*sigh*...disappointing that DCUM can take even a simple request like mine and speedily drive it off the rails into something acrimonious.

When I tended bar, my favorite drink to mix was a Ramos Gin Fizz. It's crazy complicated (whipped egg white, cream or ice cream, etc), and people drink it at brunch, when the bar is pretty calm. If someone ordered one on a Friday night at 9pm, it would throw me off my game, but on a Sunday morning, with no one sitting at the bar except an old regular or two, and the only other orders being for mimosas, I liked the challenge of mixing a good Ramos, or chatting with the patron about their ideal Bloody Mary. (Spicy? Savory? More lemon?)

For a busy night, I hoped for lots and lots of shots. Expensive, quick, impossible to mess up. Beers actually annoyed me, because I felt like the 9 seconds it took to pull a pint was 9 seconds I could be doing something else.
