Olive oil is good fat! I use it to cook everything but I'm Italian and we practically bathe in the stuff. Using a little EVOO is a great substitute for butter but if you are still squeamish opt for sunflower oil or something equally skinny that also has a high burning temp. If you aren't cooking eggs in some sort of fat, you are missing out on a lot of flavor and probably joy in life, too.

| My DH makes scrambled eggs in the microwave, which I think is gross, he thinks it's the best thing he ever figured out how to do. He uses the liquid eggs, funny thing is our DC loves them made that way now, I think it us because thy come out firmer and he can get them on a fork easier. |
| Julia Child describes learning eggs when she was at Cordon Bleu in Paris. The French didn't take their eggs for granted. Eggs are something that most people can do fine with (well, your DH apparently not yet, but easy enough to learn) and few people do an excellent job at. Bittman talks about how to do eggs well in How to Cook Everything. |

Good Lord. Yes, DH can do scrambled...poached...over easy, and phenomenal omelettes.
And he uses olive oil. Nobody in the family has more than 13% body fat (that's me...all the males have less.. )

OP, your story made me laugh! (Don't mind the bitchy comments by PPs.)
Mine cooks very delicious eggs but always leaves a mess (eggshells in the sink, gooey bowl and fork with hardened raw egg, etc.). When I cook eggs I clean as I go and do not leave a mess, but my eggs don't turn out as well as DH's. For the record, we both use butter; when we use a nonstick pan, we just use a little bit.
