This is the one that ended my search. It’s exactly what I need in a cookie. Chewy - don’t over bake.

I was going to say I've never had better than Toll House. I hate cookies that are too thick, cookies with big chunks of whatever, experimental add-ins like macadamia and dried cranberries. Simpler is best! |

Toll House recipe is the worst.
So sick and tired of the dry hard cookies and old boomers acting as if the chocolate chip cookie recipe is some immutable object that can never be changed or improved. TH cookies are 1.5/5 low mid tier. Old boomers with bland palate cookies. Heaven forbid you use more brains and taste buds to make s better cookie. Browned butter, better salt ratios, chilled batter to improve how the fat bakes, ..... Modern food science has dramatically improved the chocolate chip cookie by understanding chemistry better since the original TH recipe came out. Boomers can keep their trash food. TH chips are also the worst of the worst. Waxy garbage with zero flavor. |
Wow, strong opinions here I don’t disagree with the actual cookie specific ones (I have no opinion on boomers and cookies 😂).
Please share some opinions as well on the other cookie thread where posters are dismissively telling the op that they are overreacting to the fact that they didn’t cream butter and sugar together before mixing the cookie batter, those posters think you can dump all together with no concern for the science behind baking (maybe they are boomers??). |
This is silly. The recipe is about the dough without the add-ins. You can take any recipe and change the add-ins. If a recipe calls for chunky chips or cranberries or nuts, just omit and put whatever you want in it. |

| Krusteaz chocolate chip cookie mix. Sneaky good. Box only costs $3 or 4. All you do is add a stick of butter and an egg. Easy as heck and legitimately good. |
| I use the Toll House recipe but change the sugar ratios. Instead of 3/4 cup of brown sugar and 3/4 cup granulated sugar, I use 1 cup of brown sugar and 1/2 cup of granulated. This makes the cookies chewy, rather than hard. |
I cut the sugar in almost every recipe I use. Most things are way too sweet. |
