mexican anything:
i cook ground beef with taco seasoning from TJ. set up table with bunch of condiments (cheese, salsa, sour-cream, guac, chips, tacos). kids makes themselves nachos with chips, beef, cheese and salsa/sour cream on top. i prefer a bowl. husband starts with nachos, polishes up with a bowl. pasta dinner: cook ground beef with organic vodka sauce from TJ's. cook some pasta. that's it. easiest dinner, kids love it. burgers: husband makes burgers outside while i prep all condiments, cut up veggies, mushrooms, toast buns, air-fry fries. this one is my favorite. |

Last week I think it was (working backwards):
Lentil and cheese enchiladas Chili with corn bread Pasta with meat sauce (waiter ground beef with minced garlic and ground carrots, add rao marinara) Grilled salmon with orzo and peas bean and cheese quesadillas with green onions, guacamole and tomatos Fried noodles with some leftover pork, egg omelette carrots, peas, scallions (usually make this without meat but wanted to use up that leftover shredded pork) Pork butt in crock pot, shredded with bbq sauce on rolls |
| McCormick Gyro packet - it includes seasoning for yogurt, and seasoning for meat. I also add cumin + little allspice to the meat |
| ^^ I add extra yogurt per seasoning packet. it's potent |
| Slow cooker honey garlic chicken. Recipe is by Well Plated. It's healthy and very good. |
|
We had roast dinner tonight.
I cheated and used rotisserie chicken. Roasted potatoes in the oven for an hour. Steam in the bag broccoli/carrots Whatever gravy you like Super easy |
|
I can't even remember most of what we ate last week. All I can recall are:
Roasted squash with yogurt and spicy green herb sauces, crispy chickpeas, salad, and naan Pasta with broccoli, sausage, white beans, and parmesan (got multiple nights out of this one) Homemade pizza Maybe a tofu stir fry or sag paneer? Those might have been the week before. It all runs together. |
|
Salmon teriyaki
Steak & vegetable stir fry Cod-tomato bake Salmon sushi hand rolls Bolognese Chicken shawarma Tacos |
no joke we ate almost the same meals (minus the hand rolls- we had cauliflower/chick pea curry that night) |
|
Recently I had no clue what to make for dinner but had a package of ground beef thawed. I googled ground beef recipes and the first one that popped up was this one which I tried and which everyone loved and instantly made it into the regular rotation:
https://fitfoodiefinds.com/mexican-ground-beef-skillet-recipe/ I do sometimes add frozen corn and then we just top with whatever we like - sour cream, avocado, hot sauce, jalpenos, guacamole |
This looks good to try for the superbowl! |
