What did you eat for dinner last week? Looking for ideas

With some shifts in our work schedule, we're trying to organize weeknights better. Family of two adults, two teens. The dog eats dog food so not a consideration.

What did you eat for dinner last week?

This is what we had. I'm asking for ideas so I might as well contribute:
sheet pan chicken fajitas with bell peppers
Mac and cheese and carrots and celery
chicken shawarma with rice
Strata with bacon (using leftover stale bread)
Japanese curry with chicken
Spaghetti
murgh makhani (time consuming but a family fav)

I see that we eat a crazy amount of chicken.

Chili with sweet potatoes and black beans
Shakshusha and pita
Broccoli cheddar rice casserole

BBQ chicken and coleslaw stuffed sweet potatoes
Cheese and veggie enchiladas
Lasagna
Kind of cobb-ish salad
Chicken sandwiches (air-fried chicken patties, rolls, mayo, lettuce, pickles)

baked ziti, salad
cold chicken, noodles, and veggies in peanut sauce
grilled chicken wings and grilled asparagus
chili and cornbread

We always make enough of any recipe to last for two nights in a row. With two working and commuting parents and busy teen schedules, this system allows us to cook at home and rarely eat out.

Most of our meals are 20 mins or less bc our youngest still goes to bed early and we don't get home until 5 or so:

- peanut noodles with edamame, cucumber, peanuts, toppings like cilantro and lime
- Epicurious hummus bowls (one of our family faves) with naan
- Chili
- Bagged salad with sliced steak and fresh bread on the side
- Sweet potato and black bean tacos (used the leftover lime and cilantro from peanut noodles)
- chicken thigh osso buco over rice (We did this one on Sunday when we had a bit more time)
- Creamy soup with kale, Ital. sausage, tortellini, etc.

I love the website skinnytaste.com for meal planning. She puts together 7 day meal plans with a grocery list, and the meals are generally tasty, easy, and quick (under 30 minutes) to make.

Right! Judgy much pp?

I have no idea what we ate last week, it’s Wednesday.
Last night we had salmon marinated in pesto, ( baked in oven 15 mins) with potatoes and frozen veggies.
Tonight is ramen with added rotisserie chicken and carrots/broccoli
Tomorrow I’m making fettuccine Alfredo with homemade Alfredo which is super easy.

Last night was chickpea, sweet potato and spinach curry over rice

Tonight will be mujadara (mixture of lentils, rice, cumin, and fried onions) with a side of green beans

I made Fasole bătută for the first time, a Romanian dish. Highly recommended.

We eat a lot of chicken and turkey too OP. Not to worry! It's because we don't eat beef or pork for health/humane reasons and half the family doesn't like seafood.

The family does like baked tofu (cut into squares) in a stir fry though! I scramble egg in it too.
