Please just serve a variety of things. I hate it when those hosting try to find the one thing that will make everyone happy. The result is something barely tolerable. It’s simple to have a gluten free option, vegan option, ect

You have basically excluded every typical American breakfast food. So, look to other countries. Many cultures have soups - miso soup, menudo, pho, chicken soup. In Belize, they often have tacos for breakfast (fairly simple ones, with bits of stewed pork or chicken and onion in a corn tortilla).

This. You have a ridiculously picky group of guests. I’d hate to be stuck with some hideous vegan concoction because of one guest. I’d serve a couple of different types of cereal with milk, bagels with one or two spreads, a fruit salad, yogurt, and maybe cottage cheese That’s it. Except coffee and juice.
