Jam thumbprints are festive but I feel the jam doesn’t have enough punch…what do you use?

You can use a lemon or cranberry curd for more punch.

The Ghirardelli peppermint bark chips have a recipe on the back of the bag that's spectacular. It's a chocolate cookie with the peppermint chips. It's no harder than making normal chocolate chip cookies, but feels very festive.

For something that looks festive and is super easy, there are those cornflake wreaths - the recipe is basically rice krispy treats but with cornflakes instead of rice krispies, and add green food coloring. Drop into little balls, and add three red hot candies to each. They look like miniature Christmas wreaths.

These all sound like heavy cookies. I’d add in something a little lighter flavored. Like a basic sugar cookie or Italian Christmas cookie. I can’t eat more than a few bites of anything chocolate/nutty. So I’d appreciate something with some vanilla or almond extract flavors.

OP here…I also made peanut butter blossoms. All of these were requested by the men in my immediate family. They don’t request almond/vanilla dainties.

None of the cookies you made are what I'd call Christmas cookies or have seen on Christmas cookie platters. Sounds like your family has very different tastes so I'm hesitant to suggest Christmas cookie recipes. Many are of the rolled or pressed cookie varieties like spritzes, which are easy to make and quite flavorful and with excellent texture. But maybe they aren't rich/heavy enough for your family. You should google and decide what works for you.

Just do a drop sugar cookie and instead of purring sugar on top put colored sprinkles.
