Want to make Chicken Enchiladas

I make similar versions but i have to use corn tortilla because of the gluten issues. And the corn tortilla will break. But, they get eaten fast by my dh and son! On the other hand, I can't eat it much because I seem to have a reaction to chili peppers. And I'm not a fan of cheese.
And sometimes, I'm so lazy, i just put them in the microwave! yep, just microwave them. Pour the sauce over it too.

1. Lightly fry your corn tortillas. 2. Old El Paso enchilada sauce

Filling: just cheese with a bit of finely diced onion or beef with cheese and finally diced onion. Don't bother rolling, just dip the lightly fried tortillas in the warm sauce, put on plate, pile on topping and repeat one more time. Add a fried egg with runny yolk on top!

Pp here. Sorry OP. I just saw the chicken part. Same general recipe, just swap to green chile, preferably hatch.

+1 for the Old El Paso enchilada sauce. I just follow the recipe on the can.
