I bought Amazon salsa verde medium. Mixed in a little sour cream. Cooked in a pan after cooking chicken tenders w chili powder garlic amd onion. Shred the chicken. Put some of the sauce in greased pan then mix sauce w chicken and roll into flour tortillas. Top w more sauce and cheddar cheese. Bake till cheese is melted

The secret is building your enchiladas like a lasagna. I call it Tex Mex lasagna and it is so easy.

Take some cooked chicken (i instantpot some boneless thighs). Make a bechamel sauce w/monterey jack cheese.
Pour bechamel over a can of chilies, the chicken, and some canned beans. Layer up some canned enchilada saice (i like la frontera) layer of corn tortilla, chicken cheeselayer, corn torillas, then some enchilada saice and cheese on top. Bake covered with foil 350 for 30 min then uncover till browned.

Ok I am going to share my secret.

Mexican here, been making enchiladas for 30 years. Fussed around with my own sauces but this canned one is so good, it is the only one I use these days:

I don't use a recipe for enchiladas, just usually make it as a 2nd meal after we have roast chicken. Just shredded chicken, shredded cheese, a bit of the jarred sauce + any vegetables I happen to have around (onion, pepper, etc.). Mix together. Soften corn tortillas in the microwave, fill/roll up with the chicken mixture and put those in a casserole dish. Depending on how much chicken I have I'll use a smaller or larger pan. Pour jarred sauce over it and a bunch of cheese. Stick in oven a 375 until it's all bubbly.


Thanks for this! Going to make exactly the is for dinner tonight. I have a leftover rotisserie chicken and just bought the rest of the stuff this afternoon.

Also make a “Mexican” rice. Make rice with chicken broth. Once done, mix in a can of rotel. Then place in casserole dish and top with cheese. Bake until cheese melted on 350.

Yes, this is very good for the effort. I always do it with a rotisserie chicken and make a ton of the sauce and freeze the extra.
