Did you wash them well? I think that outside stuff comes off when you wash them.

We had a tree growing up and it was challenging—some years nothing at all, and some years the birds were really aggressive with them. But in the bountiful years we used to make really good figs in syrup and put it away for the rest of the year. I miss those! Sort of like jam but you still get the juiciness of the fig.
