This is the way I do it now. Then I marinate them like ramen eggs. Ajitsuke eggs are usually soft boiled, but you can steam them for longer until the centers are at the firmness you like. I use this recipe without sake or sugar. I do cook for 5, natural release for 5 (but make sure that you turn the machine to "off," not "keep warm"), ice bath for 5. It is so easy and the peeling is a cinch. |
