It does seem weird that they've been living together a year and you haven't had a single occasion to meet that person. I get them wanting to spend holidays with their own family. Have you been to visit your kid at college at all during this time period? I went up to see my kid during her birthday week. Offered to take her and three friends out for lunch, low key, not just her and BF. It was a nice way to meet them all, short visit, and a few months later DD brought all of them (bf plus two former roommates) to our house over the summer to check out the museums here. So we got to meet BF but in more of a laid back way - kids were all off doing their thing and it wasn't formal. Maybe your kid's significant other has some social anxiety and a group get together on their turf would go better?
Or it could be they are not that serious. The one time I expressed reluctance to accept an invitation from my BF's family, it was because I knew we were not going to be a long term couple...😕
