Thanksgiving vegetable sides; salad?

Roasted vegetable platter. Zucchini, grape
tomatoes, eggplant, cauliflower, Brussel sprouts, mushrooms, etc., etc. You can do everyone's favorites, will be a colorful, delicious, and healthy addition to the meal.

My family’s corn pudding is dead simple and everyone’s favorite

1 package jiffy corn muffin mix
1 can creamed corn
1 can regular corn
1 8 oz container of sour cream
1 stick of melted butter

Mix it all and bake at 365 for one hour


My MIL made this one year for Thanksgiving and we all liked it, and now...every time she cooks. So if you start a new dish don't include it all the time.


I mean most people only eat this once a year. If she makes it every year who cares. Most people eat their favorite holiday foods every year.



That’s why I said every time she cooks, not every Thanksgiving.

I'm a big fan of a few make-ahead sides that get better after some time in the fridge. That leaves less to do day-of and I like a few cold options on the table.

I always do a carrot raisin salad (it's a tribute to my grandmother, who hated cooking and claimed carrot raisin salad as her "thing" whenever she had to contribute to a meal). Salad always gets eaten at our thanksgiving. The simpler the better - it helps balance out the mostly caeb meal (my moms version of the meal is mostly carb).

Thanksgiving food is so predictable. We go to my in-laws and extended family. The meal itself is just a regular meal. Nothing fancy at all. But, I do like that everyone contribute to a dish, even though I eat just half of those. Nothing fancy casseroles. But, that's just my opinion. And there are like 10 desserts (pies, pies, brownies, cookies). I eat maybe half a slice of something.

It's the people that I enjoy talking to.
So, it's all about getting together and catching up and things like that. The more important things in life.
