OP here. For those suggesting corn pudding, do you mean something like this? https://www.tasteofhome.com/recipes/corn-pudding/ It was never part of our Thanksgiving menu growing up, so I've never had it.

| I'd do a kale salad with apples, pecans, and blue cheese with balsamic vinaigrette. Slice the kale very thin, massage with a bit of olive oil and lemon juice to soften, then toss in chopped apples. You can dress and let it sit for 30 min or so then add in chopped pecans and blue cheese. It's a nice, cool, acidic counterpoint to a table of rich foods. |
I like these ideas, will add color too. I like roasted Brussel sprouts but thats not always a crowd pleaser. Or roast sweet potatoes, dressing, broccoli/cauliflower gratin, corn pudding, so many options. |

My MIL made this one year for Thanksgiving and we all liked it, and now...every time she cooks. So if you start a new dish don't include it all the time. |
I mean most people only eat this once a year. If she makes it every year who cares. Most people eat their favorite holiday foods every year. |

Add a tiny bit of nutmeg to the batter. Also, I use a bag of frozen corn instead of the plain canned. It tastes better. |

Agree with this or the green bean salad. Adding another vegetable that is roasted, doesn't provide a new texture. Acid and crispness is a nice change. |

Roasted root vegetables... include fennel bulb. It's delicious roasted.
I like the idea of a kale salad with shaved parm and roasted pecans or walnuts. |
