Why do uneducated people homeschool?

Because there are no minimum standards in public schools. Kids are graduating without being fluent in English, let alone mathematics and the sciences and arts or anything else. US education standards != European education standards.

teachers in schools are being held to some kind of accountability of kids are failing tests. parents have almost no accountability for homeschooling in most States they just have to say that they're doing it.

I have family members who are homeschooling and they are religious nuts. the mom says that her daughter's don't really need an education they need to learn how to cook and clean and manage the home and be a good wife and mother except that the goal would be for the daughters to someday homeschool their own children and I they will not be well-equipped to do that

Yes they are nuts but that does not reflect the approach of all homeschooling families. There are plenty of religious ones following a real curriculum.

I don't believe the statistics that say homeschooling do better overall. None of these studies account for SES. The public schools don't have the cream of the crop because of privates. Homeschooling has more of a range of income than privates, but I don't think it includes the poor. So until homeschooling is actually measured by a test and factors in SES, I remain skeptical and I'm not even a proponent of public schools. I just don't think it's fair to categorize homeschooling as being better. From what I've seen both programs have allowed for kids to fall through the cracks on learning.

This has probably been mentioned, but read Educated by Tara Westover if you want to get some insights into the type of people who homeschool.

If you don't want to homeschool, don't. If you do want to homeschool, do. You can't control everything other people do, and sometimes, it's not your business.

Knowing content and knowing how to teach content are two different things. I know one woman with several Ivy degrees who homeschooled her kids. At least one of her kids had learning disabilities, and she had no training in how to address them. That child was definitely not getting the services that any public school would have been required to offer.

It's definitely true that we don't know how well homeschooling children do. The few studies have self selected samples. Many low SES families or families suspicious of state institutions will not bring their kids to a university to take a test and participate in a research study.

He did better than most at both. And there's no doubt he's a successful man, and will continue to be so no matter what he does.
