Non-pasta uses for ricotta?

I use it as a topping for lasagna soup. So much faster than real lasagna

Recently made pancakes from a pint never used. Then froze them for future breakfasts.

I love ricotta as a topping for toast, to add to scrambled eggs, top pizza, or baked eggs (uovo in purgatorio)
