Non-pasta uses for ricotta?

I have a container of ricotta that I purchased to make lasagna, for an event that got canceled. Don't want to make lasagna or pasta.

What are some other simple and easy things I can use ricotta in or for?

I love the mix of the fresh and roasted tomatoes on top.

I too use it as a pizza topping, usually ricotta, lemon zest, some microplaned garlic, salt, chili flake or calabrian. I do little dollops around the pizza of this mixture.

Just add honey and eat with fruits as dessert.

You can also look up desserts or incorporate in a salad

I spread it on bread, like a cream cheese, and add jam or berries or avocado, etc.

Giada has a good lemon ricotta cookie recipe.

Roast a bunch of broccoli with olive oil, salt, pepper, garlic (real or powder), and crushed red pepper.

Toast a slice of good crusty bread and smear it (thick) with ricotta. Top with squeeze of lemon, salt, and a drizzle of olive oil.

Heap and smush the roasted broccoli on top.

We make ricotta pancakes and they are the best pancakes I've ever had in my entire life. They taste nothing like ricotta, but are fluffy and amazing.
