What salad to make with Mexican food?

I have a yummy vegetarian enchilada casserole from Cooking Light. I usually make a side of guac and chips for the men in the house, but I would like a little green salad as well. What veggies to put in (don't think my Safeway has jicama!), and what dressing goes with Mexican food? Something simple, because the casserole is kind of time intensive. Or any other suggestions for a side to get some green veggies in? Thanks.

shredded cabbage with lime juice, salt, red wine vinegar. Maybe throw in some cilantro?

Romaine, tomatoes, onions, cilantro, tomatillo, cotija cheese. For dressing I would take plain Greek yogurt, mix with Tapatio (or your favorite hot sauce) and add a bit of olive oil if it is too think for your liking. Top with crushed tortilla chips.

I'm making myself hungry!

One of my favorites from The Border Cookbook:

Vegetables Verde

1/2 c. olive oil
1/4 c. cilantro
2 garlic cloves
1/2 fresh serrano (optional)
2 tbls. vinegar (I use lime juice)
1/2 tsp. salt

Butter lettuce
cucumber
avocado
green pepper
pepitas

Mix dressing in food processor, strain, and toss with veggies. Very easy, tasty and light!

Greens, black beans, corn, avocado, cilantro, halved cherry tomatoes, maybe a bit of cojita cheese or queso fresco. Dressing of Greek yogurt, lime juice, cumin, more cilantro.

I like to make a side of roasted veggies when I have tacos instead of a salad. I do a simple mix of red bell peppers and broccoli. After they are roasted, I sprinkle on a bit of balsamic vinegar. Very good! However, if roasted veggies are already in your enchiladas, then this is probably not a good idea.
