I’ve known two people who have done it.

First was a guy doing it to get shredded. He was always going through binging and restriction cycles. So he’d be on the diet a couple months, miss other type of food, then go on a binge of pizza and ice cream for a month. Always hearing “I feel off the wagon but I’m starting it up again next month” from him. He was an extremely active guy so he was still in great shape.

Second did it for health reasons - was basically allergic to/had bad reactions to most foods, red meat was one of the few things she could eat with no problem. For the most part she looked pretty sickly, but it was the diet that worked best for her given the pretty horrible circumstances.

I found it’s impossible for me to this diet 24/7 7 days a week so I’ve settled for Monday-Thursday, strict carnivore /no dairy just meat and eggs and then Friday, Sat, Sun are my cheat days

Who wants to be using the bathroom 5x a day eating fiber all the time which is indigestible and inflames the bowels anyway?

Fiber helps if you’re eating carbs to lower insulin rush but if you’re not eating sugar you don’t need fiber. It doesn’t hold any nutritional value for the body certainly not like meat poultry or dairy
