Pork Roast with Apples

Doing one in my crock pot for company (in-laws, the worst kind! ). Can't figure out what side to do.

We're having soup and salad for lunch that day, so dont really want to repeat a side salad. Thinkin green beans - but probably need a starch as well?

Green beans would work, or cooked cabbage/sour kraut. Mashed potatoes? You could just buy some rolls if you feel you need to add a starch to the veg.

I hate this dish. It tastes like weird, meaty applesauce. Sorry, just being honest.

Braised red cabbage would be perfect. Shred a head of red/purple cabbage, saute in some olive oil, add a bit of apple cider, put on a lid, and let it simmer for about 10 minutes. Uncover, add some apple vinegar, salt and pepper, and cook for 1 more minute. Done.

I was going to suggest this. I add some pickling spices (allspice, cinnamon, cloves, mustard seed, coriander) and use a lot of balsamic vinegar and some red wine instead of apple cider. I also add a little sugar. My kids love it.

Changed the plan -- I butteflied a pork roast, made an apple stuffing (bread, apples, sage, onions, moistened with chicken stock & white wine) and then stuffed it. The stuffing will serve as the side dish along with simple steamed green beans.

hopefully it goes over well with my in-laws, who seem to prefer Ruby Tuesdays to almost anyting I've ever made!!!

I'm intrigued by the braised cabbage idea, especially if there are kids out there taht eat it!! Will add it to my list of things to try, thanks!
