Some very frustrated people on this thread. I recommend forget about cooking and … well you can guess the rest. You might feel much more relaxed. In the meantime the family can eat the chili.

I'm a Texan and we use ground meat, we just often also use chuck. (The person who said they used brisket is top 3 craziest in this thread - chili is making something delicious out of not amazing meat. There are far better uses for brisket.) Beans vs no beans is a blown out of proportion joke rivalry amongst chili makers - most agree that beans in a chili is just a personal preference and a good chili with beans is still 5 steps ahead of, for instance, using oatmeal as a thickener or putting sugar in cornbread.

White chili is not chili FYI. It's chicken stew.

I crave chili maybe once a year. When I do crave it, I just order a bowl of it from a local bbq restaurant, which uses big chunks of beef. It's honestly sort of shocking to see this many of you make it upwards of once a week!

Just made a pot of chili because ground beef was the only thing available on the empty shelves at giant and Harris Teeter today!:
1 tb chili powder
1 tsp cumin1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/2 tsp onion powder
A pinch of salt
Sauté onion/garlic and green pepper - remove
Brown Meat/ add spices to bloom
Add 2 cans of diced tomatoes with green chili’s and 1 Can iof mild chili pinto beans, also some black beans I had. It was very good with sour cream and shredded cheese. Also from this thread I made homemade corn bread. Felt like a real pioneer gal using things in my pantry

NP. Can you stop asking for a “recipe” for chili? Chili is not something you need a RECIPE for. Hopefully the other poster can post his or her method.

Here’s my method:
Organic ground beef
(Sometimes I add hot Italian sausage)
Finely diced onion
A little bit of minced garlic
(Sometimes I add finely diced yellow and red peppers)

Sautée those two bad bows, then add to the crock pot along with:
Big can diced tomatoes with mild chilis
Small can tomato sauce
Salt and pepper
Lawry’s seasoned salt
Smoked paprika
A very tiny hit of cinnamon: it makes the beef taste “meatier”

As for cinnamon, just no. That’s disgusting.

Anyway, I’m surprised you don’t know that cinnamon in any beef dish (Bolognese, chili, any type of stew) is a common “secret ingredient.” I’ve read that in numerous cook books and magazines, and have seen that on numerous cooking shows. It brings out the meaty flavor of beef.


Oh, I’ve tasted chili with cinnamon in it. I’m not just speculating that it’s disgusting.

I have a crazy DH who makes a version with brisket. He even smokes it the day before, making his chili a lengthy process. He seems to enjoy it though. Makes it about once a month November-March. I think the trick with the instant pot is to pressure cook it, then take the lid off and let it cook down a bit. I will tell him to try a pinch of cinnamon!

Wow! 11 pages on arguing about chili?! This makes me laugh so much!

We are on the chili bandwagon, I guess. My recipe has cocoa and a bit of cinnamon. Take that! We freeze the leftovers, don't love it enough to eat it multiple times a week.
