+1 That said, I like bell peppers, onions, tomatoes and jalapeƱos in my omelette and then I top with about 1/4 cup of shredded cheese and serve with salsa. So good. |

I like salsa fresca or tomatillo salsa. Or I precook a bunch of onions/peppers and throw some in. If I have hashbrowns leftover I might throw a bit of diced potatoes too.

| I buy a big tub of feta from Costco. I cut into 1 inch pieces that I keep in my freezer. I throw one piece into my scrambled egg whites and the cheese melts and makes the eggs really yummy. |
