That said, I like bell peppers, onions, tomatoes and jalapeƱos in my omelette and then I top with about 1/4 cup of shredded cheese and serve with salsa. So good.

I like salsa fresca or tomatillo salsa. Or I precook a bunch of onions/peppers and throw some in. If I have hashbrowns leftover I might throw a bit of diced potatoes too.

Why no yolk?

I buy a big tub of feta from Costco. I cut into 1 inch pieces that I keep in my freezer. I throw one piece into my scrambled egg whites and the cheese melts and makes the eggs really yummy.

Some shallots and tomatoes, with very little oil. Just bring one for the table and we'll pick at it.

Spinach, shallot, and mushroom
Chorizo, onion, and cheese
Chorizo, onion, and black beans
Whatever kind of leftovers I have from last night. (Steak? Chicken? Leftover Thai veggies?)
Beets and chevre
Ham and cheese

Avocado, cheese topped with plain nonfat greek yogurt and salsa

pesto contains: olive oil and parmesan cheese--this wd defeat the purpose of the whole nonfat omelet.

Is she doing it to be low-fat or because she doesn't like it? OP never said.

Op-go for spinach or kale, a summer tomato, tiny bit of low fat mozz or swiss, tofu, sprinkle some flax seeds, mushrooms, onions., etc.
