What do you cook in your pressure cooker?

I only make 3 things in mine, so I am excited to try some of these ideas.
For years, I have used it for beans of all types, beets and artichokes-all things I love, that otherwise take a long time to cook.

Eye round roast with veggies, beef stew, ribs ( I pressure then crisp up in oven), chicken wings, pole beans, black eyed peas ( they cook quickly so don't overcook), whole chicken and that makes a great broth. I love the browning and sauté feature on my electric pressure cooker.

I braised kale and carrots in my pressure cooker. Delicious.

Curry chicken, ropa vieja, meatballs in red gravy, short ribs, chicken and rice, pasta with meat sauce

Any recipe for a crock pot can be adapted to the pressure cooker. Pressure cooker does it much better.

I make literally one thing in my pressure cooker -- the toor dal I need to make Indian food.

I have the Cook's Illustrated pressure cooker cookbook. So far I have made beef stew, curry and beans.

I've had success in using the recipes from America's Test Kitchen pressure cooker cookbook http://www.amazon.com/Pressure-Cooker-Perfection-Foolproof-Recipes-ebook/dp/B00BJ6SMW2/ref=sr_1_4?s=books&ie=UTF8&qid=1412106970&sr=1-4&keywords=pressure+cooker+cookbooks. I should note that I think that the page that describes the process for making rice in the pressure cooker prescribes the wrong amount of water.


Also, Nom Nom Paleo website's recipe index has some pressure cooker recipes. That's where I got the recipe for the braised kale and carrots.

I am a beans and artichoke cooker, too. I haven't done beets. I also like making a quick risotto in the PC. I want to check out the ATK cookbook that was mentioned.
