What Food Prep Did You Do Today for the Week Ahead?

I also made lentil soup. My 10 year old made snickerdoodles for lunch box treats. I went to the grocery store, that's the most important thing!

After bedtime, made a batch of meatballs (and the freezer) and a big pot of leek and potato soup. But, those are for the baby. DH and I are currently eating cereal and we probably will most of the week. (We might have a little of the soup, too). Little one having good food is a priority and DH and I will get by for now.

Nobody likes a martyr. Believe it or not, your baby won't know the difference if you and DH eat the meatballs and soup too. Or, more radical yet, cook enough food for you all to eat it. In a few months, junior is going to be wondering why he isn't allowed to eat cereal for dinner like mommy and daddy.

I saw the NYT's recipe too but I don't find skin-on chicken anymore. The skin seems a requirement for this recipe.

I prepped my veggies for the week. I find that chopping vegetables takes the most time. Weeknight are crazier than weekends because of the activities and homework. This is a huge timesaver!

Yes, I think it would be dry without the skin. At my grocery you can usually find thighs with skin-usually we choose white meat, but I think thighs were a good choice for this recipe. You also need fresh tarragon, but only use 2 sprigs- so I have to figure out what to do with the rest of a bunch of tarragon. But the dish was delicious.
