What Food Prep Did You Do Today for the Week Ahead?

I like to focus on "scoop able" food as my base and then throw some meat on the grill or in the broiler. For this week I did:

-Cold Kale/Red Pepper salad with Peanut Dressing
-baba ganoush
-Cold Raw beet/clementine/Avocado Salad
-tabouli
-8 omelets (for DH and I)
-Asian Tuna Salad (the exact recipe they use at Lifetime Fitness)
-Cut up fruit salad

Um, I roasted some beets, which are still sitting on the counter to be made into salad.

I made this chicken recipe from the times http://www.nytimes.com/2014/03/23/magazine/chicken-with-shallots-chef-style.html

pasta sauce with meatballs, some black bean soup, and granola.

You all suck. I was proud of doing some laundry and making frittatas for the week. You clearly do not have two under three.

OP here, not anymore! 2 under 7, but that is a whole other mess, including 2 games and a practice today. While I was doing the meal prep they were in and out of the house and it stresses me out when they are outside alone, but they are big enough now that I really can't stop them. The whole independence thing is brought with a whole other set of stresses. 4yr old comes crying stating that he has fallen down the porch stairs. Mom of the year here putting kale ahead of safety.
But, yes, it will get easier in some regards. Replaced by other logistical difficulties!

OP here. When I don't get to the grocery on the weekend, it royally fucks my weeks up. In case of emergency, I'll take a work from home day and hit the grocery store on my lunch hour. I feel ya!

My kids didn't nap, so all I made was brownie bites. Sundays are my big cooking days, I'm so screwed this week.

Giant pot of lentil soup was dinner tonight and will be my/DW's lunch for Mon & Tue.

10 month old learned to stand up in his crib and scream instead of nap, so one nap was done in the stroller and one was done driving around in the car. After bedtime, made a batch of meatballs (and the freezer) and a big pot of leek and potato soup. But, those are for the baby. DH and I are currently eating cereal and we probably will most of the week. (We might have a little of the soup, too). Little one having good food is a priority and DH and I will get by for now.

Sat on my ass and downed a half a box of girl scout thin mints.

No clue what the boys - dh, ds1 and ds2 will eat this week.

Maybe they'll figure it out.

Did a batch of enchiladas for two dinners this week. Alsdo did a batch of curried chickpeas, but the three year-old won't eat them, so I may need to demote them from our dinner to my lunch.
