At my grocery you can usually find thighs with skin-usually we choose white meat, but I think thighs were a good choice for this recipe. You also need fresh tarragon, but only use 2 sprigs- so I have to figure out what to do with the rest of a bunch of tarragon. But the dish was delicious.[/quote]
