Mini no-bake cheesecakes. Giant sells mini pie crusts. You will get 12 pies out of one box of mix. Takes 10 minutes.

I recently made Irish Soda Bread(s). Betty Crocker has a good recipe.
The pain in the neck thing is you need raisins and buttermilk.
The other stuff you probably have (flour, baking soda, baking powder, a little bit of sugar and salt).
You don't need yeast, or even a special pan.

It looks good and you can sell them as whole loaves. Ours went for $10 each for $4 worth of ingredients for 3 or 4.

Blueberry muffins in a mix (the one that is $2.50, not 99 cents) are good because healthier parents will choose a muffin or a cupcake.

Cornbread (in the 99 cent mix) is easy and you can make it as a loaf or muffins. It is good because people KNOW what is in it, and toddlers will even eat it.

Putting candy of any kind on a cupcake will make it sell faster. Cake mix + frosting + skittles or M & Ms =bake sale gold.

Slice and bake sugar cookies rolled in colored sugar (green for spring/St. Pat's day) are also simple.

I also 2nd the rice kripsie treat idea b/c it is 3 ingredients and people know what it is. Also it is gluten-free.

Make sugar cookies in the school colors.
Here's a recipe, or just take a sugar cookie dough mix and add jello -

Also an easy/cheap thing to make is cake mix cookies. Someone mentioned Andes cookies -I bought a cookie jar mix of those at a fundraiser recently and it was just a chocolate cake mix with crumbled Andes bars on top, I made the cookie and they were delicious. You can make cookies out of just about any cake mix.

Peanut butter cookies, but ice them with a butter or slightly savory frosting
