Tips/resources for converting to a low sugar/carb, keto diet

We've cut out processed carbs and anything with added sugar but still eat fruit, potatoes, sweet potatoes, old fashioned and steel cut oats, and barley. No crackers, bread, pasta, etc. for us parents, DS eats them.

No major cravings, energy levels are good. We both run, and I feel like I need some carbs for that.

Almonds are good with cheese. Plain Greek yogurt with berries is another good snack.

I think it would be harder to do keto with a vegetarian in the house compared to something more moderate.

And keto substitutes seem to be ultra processed Franken foods.

Look up the Mediterranean diet -- well researched and wouldn't be that hard to make work with a vegetarian kid.

As far as sugar, avoid any sugar substitutes. Use date syrup or ground date “sugar” or YACON syrup.

Carbs - consume only whole grain carbs. Barley, millet, oats, wheat berries, whole wheat, brown rice, etc.

I eat tuna on slices of cucumber.
Cheese and nuts and apple slices.
I hate hummus; so I have no suggestions there.

I do lower carb, not full on keto, but the easiest thing is just to make a carb on the side and replace it with vegetables for yourself. Like last night I ate chicken and white beans over broccoli instead of pasta, and we had baguette on the side. Or make something like chili and let people portion their own rice or whatever grain you'd typically eat it with.
