Lentil chili and baked potatoes

Breakfasts:
Kids are still finishing a batch of KAF morning glory muffins. After that I'll make them some banana muffins or pancakes since we have a couple that are overripe. Lunch: A spaghetti squash for the base and then any leftovers in fridge. Dinners: Made a big pot of pinto beans last night. Plan to make pork carnitas in the instant pot and dress up a bag of cole slaw today or tomorrow. So we should have a few meals worth of tacos, quesadillas, etc. Braised tofu and green beans. Have two cauliflowers and two zucchinis without a plan yet. Considering a creamy cauliflower curry or zucchini koftas in tomato sauce, but also want a protein. Have until later in the week to decide. |
Can you tell me how to make apple muffins? And the veggie muffins, too, actually? |

This week's dinners:
Shrimp Curry over rice with a side of salad. Pasta Arabiatta cooked with green bell pepers, fresh garlic and salad. Pan roasted chicken with roasted garlic green beans and garlic potatoes. Cauliflower and Potato sabzi/vegetable dish (Aloo Gobi) with fresh roti, yogurt and salad. Chicken Keema wraps with potatoes and peas and salad. |
Not enough protein. |

Breakfasts:
Normally we'd sprinkle in a morning or two of oatmeal along with toast or cereal, but the kids have a lot of testing this week so I might add in scrambled eggs. Dinners: - Pioneer Woman corn and cheese chowder, homemade bread that my teenager did half the work to make - homemade burrito bowls with chicken, black beans, bell peppers, rice, and onions - salmon, baked potatoes, and I can't remember the green vegetable The dinners are cooked to have leftovers because I run out of time to cook on sports practice/game nights. |
Not PP, but you don't know what you are talking about. I see chicken, I see lentils, and I see eggs. One night with cauli tacos with a bit less protein is fine. |
Hilarious that you think you can extrapolate a family’s entire daily protein intake from one meal per day. |
