In a rut and need easy healthy family meals

My best low prep meal is ground meat. Lean ground beef, bison, turkey, lamb, or chicken - I keep them in the fridge/freezer and pair with a vegetable. Examples!

Ground bison with garlic and onion powder plus bagged frozen root vegetables. Guac on top if you’re fancy.

Ground beef with cooked carrots - we all love the beef plain with just salt. Frozen peas are also great with beef.

Ground turkey with teriyaki sauce, frozen stir sry veggies and frozen pineapple. Microwaveable rice.

This formula means I always can make a healthy meal even when I’ve been too busy to shop because I have bagged veggies in the freezer and meats on hand. Ground meat cooks so quickly so it’s really practical.

For my kids I’ll also offer fruit, cheese cubes, etc. on the side.

These are in constant weeknight rotation; we do most in 20 mins or less but some have make ahead prep or involve crock pot:
- greek bowls with make ahead greek chicken meatballs or spiced ground chicken
- hummus bowls with spiced ground beef
- salad dinner (bag of salad + prebreaded chicken tenders + fresh loaf of bread)
- sandwich night (french dip, blt, grilled cheese and tomato soup, etc. with chips and fruit on side)
- turkey zucchini burgers with sweet potato tots
- beef and broccoli with rice
- sesame chicken bites with rice
- mississippi roast w egg noodles (crock pot)
- sweet potato/black bean tacos
- pasta (half spaghetti, half zucchini noodles) with salsiccia and jarred vodka sauce
- Asian lettuce wraps w ground beef
- Lemon pepper chicken
- Chili (regular or white chicken chili)
- Sausage, tortellini, spinach soup
- Old school (ground) beef barley soup (my crew likes this better than beef bourguignon so I save the time now unless I am craving a good beef stew on a cold weekend)
- Shakshuka with good bread
- mexican chicken skillet - pre cooked chicken, can of black beans, jar of corn and black bean salsa, 2 pkgs microwave spanish rice (cook the rice then throw it in there) bag of mexican cheese melted on top, serve with cilantro, lime, sour cream, tortilla strips
- cubed chicken and veggies with jarred Indian sauce, naan, yogurt.
