Urgent! Carb for cheesey cauliflower gratin?

Cauliflower has only 5g of carbs per cup. Broccoli has 6g. Considering OP was going for comfort and not low-carb, I suggest a toasted roll with butter.
A cup of cauliflower only has 29 calories, but 20 of them are carbs. It is mostly carbs. Vegetables are mostly carbs.

About half of the carbs are fiber, and as long as you aren't a ruminant, those fiber carbs can't be digested.

Alison Roman. It turned out yummy but a little too greasy for my taste! I think next time I’ll try one with an actual bechamel and more cheese. I think a bigger casserole dish too for a better crunchy - tender ratio. It probably does make a better side dish for eg roast chicken than a main.

In any event it kept me busy for a few hours, which was the plan!
