What are you serving for Thanksgiving?

I use Mary Berry‘s lentil roll recipe. I use the store bought pepperidge farm puff pastry. 1 sheet I fill as is and 1 sheet I leave out the goat cheese and use vegan shredded cheese for our vegan guest.https://thehappyfoodie.co.uk/recipes/mary-berrys-jumbo-lentil-rolls/

11 people. 2 are celiac, 4 are very sensitive to gluten and dairy. 4 are pre diabetic. 1 is allergic to nuts and a number of types of seeds.
This is the most challenging Thanksgiving dinner

For the vegan friends….isn't puff pastry basically butter? Swapping out cheeses won’t make a lentil roll vegan unless the pastry is made with a non-dairy fat.

5 Adults, everything is local to us and organic. We dine at 7pm.

Aperitifs are at 5pm--that will consist of Krug Vintage 2002 and small bites like olive all’ Ascolana, brandade with crudités and duck pâté en croûte.

Menu:

First: Kurbis soup

Main:
2021 Domaine Comte Georges de Vogue, Bonnes Mares Grand Cru

Maple and butter roasted Turkey
Sweedish Meatballs from our grass fed cows
Mashed potatoes
Sweet potato casserole in ramkins (individual servings)
Green bean casserole prepared with fresh ingredients, nothing canned
Cornbread and Sourdough stuffing casserole
Cranberry sauce

Third:
Fresh salad greens with a lemon-dijon dressing

Dessert:
More Krug
Crème brûlée
Gateaux aux pommes de Normandie
Pumpkin pie

I'm debating skipping the stuffing this year and just doing rolls. It's just immediate family this year.

Can you say more about the third course? Is this a French thing to serve salad third?
