I’m at work today and can’t think straight.
I’ve planned tomorrow and that’s it. Salmon/rice/broccoli

I can't cook unfortunately. I will make flounder (sometimes rotisserie chicken) soup from adding potatoes, carrots, rice, dill.
Steak and pasta for the kid.
Most days I sautee salmon and add it to store bought salad.

Monday-sheet pan chicken breasts with roasted sweet potatoes and fennel
Tuesday-Mei fun w/pork tenderloin
Wednesday-takeout (I do a workout class while DH and DD do a taekwondo lesson)
Thursday-gnocchi with Brussels sprouts
Friday-heading out of town for the weekend

Sunday - Parmesan-crusted chicken thighs roasted with cubed potatoes, carrots
Monday - Blackened salmon bites, rice, roasted beets
Tuesday - Steak, roasted sweet potatoes, peas
Wednesday - Takeout/order in
Thursday - Spaghetti with meat sauce and Italian sausage slices, side of whatever veggie is in the refrigerator
Friday - Turkey burgers, fries (we usually do a fun/casual food for family movie night)
Saturday - Split pea soup with ham bone that I froze on New Year's

Tonight was at my mom’s — pork roast, red cabbage, potato/parsnip latkes.

Tomorrow will be leftovers from Saturday - flank steak rolls and risotto.

Tuesday is date night.

Wednesday is my mom’s birthday, so steakhouse dinner.

Thursday probably tonight’s leftovers.

Friday maybe fondue?

Saturday possible dinner out with friends, trying to keep the kitchen clean because I’ll need to make a cake because…

Sunday I’m hosting family friends for my mom’s birthday celebration— so will make her meal of choice — shrimp & grits, a butter lettuce salad (thinking the Via Carota one), and a rum cake.

I did Sunday prep for the first time in years. Spinach lasagna, salsa chicken for tacos, minestrone soup- cooked. Add in some bagged salads and a breakfast for dinner night and I’m feeling like a homemaking queen over here.

What is your spinach artichoke sauce for chicken? I have a can of artichoke hearts I cannot remember why I bought.

We had hot dogs last nights night, and homemade applesauce. My grandparents used to have hot dogs and apple crisp every Sunday night, so this was a memorium meal.
Tonight is grilled chicken with herby lime rice and Brussels sprouts
Then it gets iffy but I have meatball subs, pumpkin pancakes with fruit, and chili as likely meals this week.

Dal makhani, roast squash with cilantro sauce and yogurt, rice, naan

Leftovers meal - naan, squash with sauces, crispy chickpeas, rice and spinach

Spaghetti and meatballs, salad

Gochujang salmon, rice, either roast broccoli or chopped raw veggies (my kids will hate this entire meal)

Freezer meal - either homemade butter chicken with peas and spinach salad, or store-bought pierogies, kielbasa, and cabbage
