What’s for dinner this week?

I know we are having chickpea coconut milk curry with broccoli and naan bread. But I can’t figure out what else.

So far as ideas I have: pancakes (we do breakfast for dinner one a week - alternating between banana pancakes and eggs), spaghetti and meatballs, and chicken chili. I split cooking dinners with my husband so he may come up with the other 3. If I remember I’ll post back. I’m away with one kid next weekend so I’m not going to be involved in more than 5 dinners actually

Lasagna and salad tonight.

DS wants friend chicken and potatoes (probably roasted) tomorrow so I will add a salad and some lemon carrots.

Probably leftover lasagna and roasted broccoli and garlic bread on Monday.

Fajitas on Tuesday

Who knows Wednesday because we are all very busy that evening

Butter chicken on Thursday with jasmine rice, palak paneer, naan, cucumber raita, and samosas

Probably ordering out Friday

I made a NYT Baked Potato Soup tonight. It was good, but if you consider making it, it needs more potatoes than the recipe calls for. Served it with salad with the Green Goddess dressing everyone has been raving about.

Going to have some air fryer Old Bay shrimp with sauteed greens tomorrow.

Haven't even thought about the rest of the week, but I have enough leftover potato soup that I'll have it at least one more night.

I’m the person who joined the winter csa so my dinners know no of write themselves around the veggies that I have been getting. Here is a rough outline:

Rainbow chard pasta
Saag paneer
Pickled daikon/carrots for bahn mi inspired noodle salad-is it called bun??
Radicchio in some sort of salad
Potato leek soup
Honey miso roasted carrots

I don't use a recipe but I toss carrots with olive oil (can use regular or garlic olive oil), salt, pepper, garlic cloves, lots of lemon juice and zest, and some maple syrup (if your carrots are really good and sweet less, so try one first).

I like to cut the carrots in rough odd shaped pieces about the size of my thumb. But you can cut them however you like.

Roast at 425 for about half an hour, tossing half way.

Sprinkle for fresh parsley if you want but not necessary. Good on salad too, warm or the next day. Also easy to add peppers or halved grape tomatoes to this.

We have regular weekly activities every night of the week now, somewhere between 7 and 10 pm (the exact times vary by night, most are 2 hours long). So dinners are really rushed these days, as DH and I both get home from work between 5:30-6.

Currently thinking:
Monday - chicken enchiladas (prepped on Sunday, older kid can put it in the oven while I'm on my way home from work)
Tuesday - ham and bean soup from the freezer, with a bagged salad and rolls
Wednesday - spaghetti with a meat sauce I made a few weeks ago and froze, salad
Thursday - breakfast for dinner, French toast and scrambled eggs, fruit
Friday - takeout

Sunday: Chicken braised with mushrooms and leeks with mashed potatoes and roasted carrots
Monday: Leftover chicken and mash
Tuesday: Roasted salmon, rice, veg
Wednesday: Probably spaghetti, salad, garlic bread
Thursday: Something that goes with a really huge glass of chardonnay because Dry January is over.
