You’re really whining about this, OP? I can think of four menus off the top of my head.
Vegetarian lasagna Traditional meat lasagna Salad, garlic bread, fruit salad Easy to think of Italian/antipasti starters 2-3 different kinds of soup/chili (at least one vegetarian), bread/rolls, salad Easy to think of charcuterie, artichoke dips and other appetizers A spiral ham or a beef tenderloin with numerous sides, including vegetarian sides, with a vegetarian soup like butternut squash as a starter. It took me two minutes to think of three menus. This is not a challenge, OP. Unless you are a really limited, uncreative home cook, that is. Sounds like it. In that case, you should just get catered food. |

Not op, but I’ve got no problem working around food allergies. Preferences are another matter. I make one prime rib roast a year (really it’s the only red meat I cook all year) and I won’t change that for anyone. My sides and apps are significant enough to make up for not choosing to eat the beef. Op, provide side options. That’s all people really need. Buy good bread. |

| This is really easy to work around. Just make the protein you would normally make, unless its seafood, and make a few extra sides that are both vegetarian and w/o potatoes. This is much easier to deal with than a vegan or dairy free restriction which ruins most decent meals. |

Vegetarians are not picky eaters. Many have ethical reasons for not consuming meat. Don’t accommodate them if you want to be a sh!tty host, but picky they are not. You sound like you’re the PITA. |

Not sure why people are suggesting potatoes when potatoes are a specific issue. We never have potatoes and there is still a world of other veg options. If you want something potato-ish you could do a carrot soufflé or a celery root and carrot mash.

| I do fajitas in situations like this. Grill some steak and chicken (for those who want meat), and vegetables (for those who do not). Cheese, avocado, radishes, lettuce, pico. Rice, beans, salad. And I make red sangria. |
