Was BIL annoying/ rude?

Not rude. They all asked for eggs. Bacon and eggs is a typical breakfast item. This doesn't seem like a heavy lift at all. Your BIL could have been more gracious but if you didn't want to cook breakfast for them you shouldn't have offered.

I can’t imagine being so petty that I’d go on the internet and post that I’m annoyed because I offered to make breakfast for visiting relatives with little kids and they wanted different kinds of eggs.

This would annoy me, probably because though I’m a fine cook I don’t enjoy it. as you say, though, you caused the problem. Next time get bagels or make a quiche the night before and serve it with a fruit salad from the store.

I think it was pretty high maintenance. If I were Dad I would have said Boys I think we are making lots of work for Auntie. Let's all go with scrambled today. If they only visit once a year I would just do it
