Sure, real European hot chocolate is thick and decadent - but it's not chocolate milk.

I love what carrageenan does for taste

Add some half-and-half to whole milk until desired consistency.

OP,

There is no way to get the thickened texture without either a ton of fat or added thickeners.

You could try making some at home with cornstarch, if you want to avoid cream, cocoa butter and jelling agents like carageenan.

This is delicious (uses cornstarch as a thickener). I've only tried it hot, but I guess you could chill it if you wanted cold chocolate milk.

The Trader Joe’s whole fat chocolate milk uses guar and gellan gum (plus the fat from whole milk) to thicken it. But I sense that OP is of the “stuff” “maybe” “later” “dangerous” .net school of thought and that’ll probably be too risky for her, too.

Otherwise Hershey's syrup + whole milk + a pinch of kosher salt is the way to go.

This is the best idea. I make hot chocolate with evaporated milk. It is so good cooled down. Still thick. So a combo of melting a good hot choc mix with evap milk then cooled down. Give it a try.
