I made the Mongolian beef recipe from Woks of Life, which is supposed to be a knockoff of the PF Chang’s version. It was a major success.

Last night: white bean and tomato sauce (NYT)

Tonight: chicken meatballs, spaetzle, vegetable

Tomorrow: crab and corn chowder, salad

Today for lunch was Mexican leftovers made into breakfast food: arepas topped with pulled pork and scrambled eggs, pico, guac and cotija cheese

Tonight's dinner might be charcuterie or pasta.

Tomorrow lunch the remaining leftover Mexican, or soup and cheese toast.

Tomorrow dinner leftovers from Saturday - the Ina summer beef tenderloin, with cheese toast and roasted acorn squash.

Rest of the week lunches: alternating soup & cheese toast with tuna salad.

Wednesday dinner: Marry Me Chicken over rice with a pear & gorgonzola salad kit.

Thursday: probably leftovers

Friday: takeout pasta.

Saturday: Not sure - maybe a pork tenderloin?

Baked salmon tonight, homemade chana masala tomorrow, TBD or leftovers after that.

Tonight we had salmon marinated in Costco pesto. Baked 20 mins in oven. Had it with Trader Joe’s 3 min rice and broccoli and carrots.

Tomorrow we are having Ramen soup, I’ll add carrots/celery and rotisserie chicken. I need a quick dinner because it’s a soccer night and this is less than 10 mins.

Wednesday black bean quesadillas, using some of the leftover rice from tonight, canned black beans and shredded cheese. Guacamole and tomatoes on the side.

That’s as far as I got so far. Kid is 11.

We had sliders last night with a side of broccoli and sweet potatoes, tonight was salmon, rice and cinnamon/maple acorn squash... for this week we'll do pork chops, with some sort of veggie side and probably mashed sweet potatoes, a tofu/veggie stirfry, a leftovers night and likely a pizza night, That's all I've got currently. I found a recipe for a cauliflower soup I'm wanting to try so maybe that will end up in there somewhere.
