| I roast them, let them sweat in a bag, then peel off the skin and pull the peppers into strips. Sauté these in a pan with olive oil, salt, garlic and then store to use on salads, in quick little cheese quesadillas, in pasta, etc. Can also put them in a blender to make a sauce. Hatch chile is like a top 5 food for me, I love them |
It’s because you’re growing them in Silver Spring. Wrong climate. Chilis are like wine grapes — where they’re grown, as well as the weather in a given year, make a big difference in flavor. |
Not really. I’ve had Hatch and the ones I grow and there’s no day and night difference. |

I used to live in NM and I definitely miss this! The scent of fall in NM is green chiles roasting rather than pumpkin spice! |
Wrong. I’m from Georgia and absolutely love Hatch Chiles. I like other Chiles but not as much as hatch. |
