I'm a gringo and love birria tacos! I hadn't heard of them until a few years ago. My favorite spot for birria tacos in the DMV is Cocineros in Hyattsville. SO good!

The key component is dipping the raw tortilla shell you’re using into the skimmed fatty liquid the meat cooked in. When you grill that dipped shell to crisp it up, it gives it a richer flavor and red color. |

That place is cool. One of the food halls (maybe Pike Kitchen?) has birria ramen. I tried it. I liked it. |
It's not that different from making pho. It's a slow simmered meat broth that has many components and cannot be made properly quickly. |
