This is also the winning answer, yum!! I have been thinking about good cheesecake for a couple of months now. I’ve been in a funk about it because my local bakery doesn’t make my favorite this time of year. Why didn’t I think to make one? |
| Pumpkin egg custard, I use a dozen and cut it into 6 pieces and we have for breakfast. If you don't do dairy it is also good with full fat canned coconut milk. Cook in a water bath until a knife in the center is clean. My kids love it. |

Pasta fritatta. I use 7 eggs for 1 box of thin spaghetti.
Cook spaghetti, drain, toss in a pot on stove with little oil for minute or two. Turn off heat. Add 1/2 jar marinara, pour on top a mixture of 7 eggs, little cream, some shredded cheese and/parm cheese, can add chopped tomatoes or spinach too. Shake pot so egg settles. Cook in pot on stove maybe 3 minutes, then pop it in oven until just starts change color, maybe 30 minutes. So must be oven safe pot. I cut it like a pie. |
