Quiche is always a treat. Freezes well and so easy.

Tons of people love eggplant parm, which is why it is a staple on Italian restaurant menus.

Ask them what they eat. I am a vegetarian and I don't eat a lot of eggs so I wouldn't eat a Quiche.

Yes— just ask. I’m vegetarian and don’t eat eggs and hate eggplant parm. I’m sure your friend can give you ideas of what they like— or at least ingredients they avoid.

DP. I’m a born and raised vegetarian, and I do not like eggplant or eggplant parm.

DP. I’m a born and raised vegetarian, and I do not like eggplant or eggplant parm.


I've been veg for over 40 years and unfortunately eggplant makes me itchy - slight allergy - which is sad because I love it.

Agree with the others to ask your friend if they have any food sensitivities or restrictions, in addition to being veg.

That said, I think the quiche and chili suggestions here are great ones. No one ever says no to a homemade mac and cheese either (unless they don't eat dairy). There are so many good things to eat! How good/adventurous of a cook are you, OP?

I'm a carnivore but I like the following vegetarian dishes:
- lentil/mushroom Shepherds pie with either mashed potatoes or Ore Ida tater tots on top
-acorn squash stuffed with mushrooms, onions, walnuts and panko
- stuffed zucchini boats
- eggplant rollatini (like eggplant parm, but roast eggplant circles, stuff with ricotta mixture you'd use for lasagna and roll. Then place in pan with marinara sauce
- white bean soup with rosemary
- enchilada casserole (layer corn tortillas or tostada with enchilada sauce, cheese, black beans, and whatever veggie mixture you want to use, top with cheese)

Thanks for all the suggestions! These are friends I've eaten many meals with and I'm not bugging them in their current situation about the number of eggplant lovers in their home (I do remember having a pizza with fried eggplant with them but I don't think the kids had any). I might make myself an eggplant parm.

I think I'm going to do a vegetarian shepherd's pie (should that be called a sheep's pie?), broccoli cheddar soup and a loaf of bread.

Eggplant makes me throat numb and itchy! I love the stuff but avoid it now.

Homemade bean enchiladas. Martha Stewart also has a “Crispy Baked Chicken Flautas” that are kind of bananas good for how easy they are; I don’t see why you couldn’t sub in mashed beans for the ground chicken (although that one’s all about the cilantro so if your friend doesn’t like cilantro maybe skip). https://www.marthastewart.com/1543133/crispy-baked-chicken-flautas

You could also do a little snacky tray. Vegetables and your favorite homemade dip plus crackers and Smitten Kitchen’s feta salsa. https://smittenkitchen.com/2008/12/feta-salsa/ It doesn’t really answer your friends’ protein needs, but sometimes you just want to snack and don’t want to commit to eating an entire meal.

NP - I usually do quiche, fruit salad, a nice baguette, and cookies. Most vegetarians eat eggs; vegan is a different story.
